摘要

Abstract

[Objective]The study aimed to compare the effects of different pretreatment methods on the extraction of lycopene and optimize its pretreatment technology. [Method]The tomato pulp samples was pretreated by the methods such as centrifugal dewatering, freezing, drying and alcohol treatment for studying the effects of pretreatment methods on the extraction of lycopene. [Result]The extracts had absorption peaks at 444, 472 and 502 nm resp. and its maximum absorption was at 472 nm. The extraction rates of lycopene from all the pretreated tomato pulps were as follows: centrifugal dewatering treatment > freezing treatment > stoving at 45 ℃ and grinding > stoving at 60 ℃ and grinding and the extraction rate of lycopene from tomato pulp pretreated with anhydrous alcohol was a little lower than that of lycopene from non-pretreated tomato pulp. The tomato pulp was treated by centrifugal dewatering and freezing and then extracted with petroleum ether ∶ acetone=1∶1 for 1 h, the absorbance of extracts changed less. The tomato pulp was treated by drying and then extracted with organic solvent for 1 h, the absorbance of extracts changed more. When the material-liquid ratio was 1∶6, the extraction effect on lycopene was better. [Conclusion]After the tomato fruit was pulp beaten, both centrifugal dewatering and freezing treatments could increase extraction rate and shorten extraction time.
