Heavy Metal Pollutants in Soybean and Soybean Products
摘要
Abstract
It has been found that the major heavy metal pollutants such as Cd, Cu and Pb are distributed in cotyledon and minor in seed capsule by an analysis. The concentrations of Cd, Cu and Pb are in the highest in protein and lowest in soybean oil in various nourish components of soybean. In terms of both globulin and albumin, the concentration of Cd, Cu and Pb are in the highest in many types of protein. In contrast, the contents of Cd, Cu, and Pb, respectively, in bean curd, soybean milk and bean sprout derived from soybean are abased distinctly.关键词
