摘要
Abstract
Objective: To study the best extraction technology for enzyme hydrolysis of comu bubali. Methods: The orthog-onal test was employed to find the best extraction technology for enzyme hydrolysis of comu bubali on the content of pro-tein. Results: The best conditions for the extraction was pepsin enzyme, pH=2,700 U/g, 39℃ and 4 hours. Conclusion:Ex-traction conditions are suitable for enzyme hydrolysis of comu bubali.关键词
