碱醇处理的木薯淀粉结晶结构的变化
Crystalline Structure Changes of Tapioca Starch Granule by Alcoholic-Alkaline Treatment
摘要
Abstract
Tapioca starch was treated with a mixture of ethanol and NaOH solutions at a controlled temperature. The treated starch was then neutralized with HCl,washed with ethanol,and dried at 50 ℃ for 6 h. X-ray diffraction experiment showed that the proportion on mierocrystal, submierocrystal and non-crystal of the tapioca starch treated by alcoholicalkaline was changed. Lower concentration of ethanol,higher concentration of NaOH, or higher temperature gave the resuiting starches higher non-crystallinity. Less Maltese crosses were observed under polarized-light microscopy,indicating the changes of crystalline structure.关键词
