Abstract

The experiments of glass transition of rough rice kernels showed that the grain involved a transition from a solid “glassy” to a liquid-like “rubbery” state during drying. The authors measured the glass transition temperature of rough rice kernels that were dried in different conditions using differential scanning calorimeter. The effects of moisture content and drying condition on glass transition were discussed, and the experiments showed that drying condition did not affect the glass transition temperature. The glass transition temperature decreased with increasing moisture content. The models of glass transition temperature were established, which could predict the glass transition temperature curve if moisture content of rough rice kernels were determined.
