摘要

Abstract

The paper researched on the preparation of new -type nutritional health -protecting gruel with Tremella fuciformis and black rice through experiments. According to the comprehensive evaluation of sense and indexes, the best formula and preparation technology of the nutritional health - protecting gruel were determined as follows: using high - temperature drying method to treat black rice, using xanthan gum + konjak powder (from 2:3 to 4:1 ) as thickening stabilizing agent, sugar content being 10%.
