Abstract
As a kind of natural pigment, the Monascus pigment has several advantages such as nutrition, no toxicity and multi-function. Solidstate fermentation is the traditional method to produce Monascus pigment, which has unique advantages in comparison with liquid fermentation and always been paid attention to by the scientists. The paper reviews the recent research reports on Monascus pigment, summarizes and analyzes the conditions influencing the production of Monascus pigment through solid-state fermentation so as to provide reference for its popularization关键词
