摘要

Abstract

[ Objective ] To analyze the nutritional content of Octopus vulgaris muscle and evaluate its nutritional value. [ Method ]The nutritional composition of Octopus vulgaris were tested and analyzed using routine muscle testing method. [ Result ]The results showed that contents of moisture ,crude protein,crude fat,crude ash and total sugar in fresh muscle of Octopus vulgaris were 79.40%, 18.00% ,0.50% ,2.08% and 0.29%,respectively. 17 kinds of amino acids were found in the muscles of Octopus vulgaris. The ratio of total essential amino acids to total amino acids ( WEAA/WTAA) was 38.25% ,and the ratio of total essential amino acids to total non - essential amino acids (WEAA/Wveaa) was 78.22%. [ Conclusion ] It was clear that the content of the different amino acids was stable and the constitutional rate of the essential amino acids agrees well with the Tood and Agriculture Organization of the United Nations/World Health Organization (FAO/WHO) Standard.
