紫红薯膳食纤维漂白工艺研究
Studies on the Bleaching Technology of Purple Ipomoea batatas Dietary Fiber

Abstract
In order to obtain lighter -color purple lpomoea batatas dietary fiber, taking whiteness of the sample as an indicator, the bleaching technology of the purple lpomoea batatas dietary fibers was researched by H202 method. The optimum technologic parameters of the purple Ipomoea batatas IDF bleaching was obtained with single -factor and orthogonal experiment. The results showed that: 1:15 proportion of purple lpomoea batatas IDF to H2O2 solution, the concentration of hydrogen peroxide was 40 g/L, pH 10, temperature 60 ℃, time 180 min. Its brightness reached 85.39%.关键词
