Abstract
Xylanase is widely used in many areas such as animal feed preparation , food processing , and pulp and paper industry. Yet recently a proteinaceous component named xylanase inhibitor protein is found existing in cereals like wheat, which is capable of inhibiting xylanase activity. Xylanase inhibitor protein shows a multi-type feature, whereas all types of inhibitor proteins only inhibit the exogenous xylanases added to the medium and exhibit no inhibition activity towards the known endogenous cereal xylanases, leaving a challenge to the function display of xylanases used in the processing areas. A question was then put forward that whether the presence of xylanase inhibitor protein could affect the functionality of added xylanases. The present studies related to this question merely appeared in the areas such as breadmaking, gluten-starch separation, and animal feed preparation. The effects of xylanase inhibitor protein on xylanase functionality in these areas were reviewed in this paper. [ Chinese Journal of Animal Nutrition ,2011 ,23 ( 3 ) :381-386 ]关键词
