摘要

Abstract

[Objective]A method for drying thin layer bean dregs was developed for reducing the time of drying and enhancing productivity. [Method]The fresh bean dregs were dehydrated using microwave drying, hot-air drying, and combination of microwave and hot-air under different conditions. [Result]The microwave drying of bean dregs for 4 min at 80 W,followed by hot-air drying for 75 rain at 105℃ showed the best drying effects on bean dregs. Using the combo method, the drying time was shortened by 47.33% compared to that of hot-air treatment alone without affecting the quality of bean dregs.Further, the mathematical model of combo drying method for thin layer bean dregs was obtained [ln(-lnMR)=-5.21456+1.102658P+I.12594P2+(I.30009+O.21457P-O.O5214P2)Int], which describes the relationship between water content and drying time during the dehydration process of thin layer bean dregs. [Conclusion]The combo drying method using microwave and hot-air was found very effective for dehydration of bean dregs and reduced the time, and may be recommended for its industrial use.
