摘要

Abstract

In this paper, amino acids in Shanxi aged vinegar were determinated by automatic analyzer for amino acids, and compared with those of non-geographical vinegars.The result showed that there are more amino acids in Shanxi aged vinegars than the non-geographical vinegars.The main types of amino acids in Shanxi aged vinegars result in its unique flavor.The contents of amino acids in Shanxi aged vincgars are affected by the aging time.
