Study on the Amino Acids of Shanxi Aged Vinegar with Geographical Indication
摘要
Abstract
In this paper, amino acids in Shanxi aged vinegar were determinated by automatic analyzer for amino acids, and compared with those of non-geographical vinegars.The result showed that there are more amino acids in Shanxi aged vinegars than the non-geographical vinegars.The main types of amino acids in Shanxi aged vinegars result in its unique flavor.The contents of amino acids in Shanxi aged vincgars are affected by the aging time.关键词
