无糖生姜口香糖的研制
Development of sugar-free ginger gum
摘要
Abstract
Taking ginger as the raw material, and the ginger oil which extracted by supercritical fluid CO2, mixed with gum base, xylitol,maltitol etc.to make sugar free ginger gum.The result, from the single and orthogonal experiments, showed that the optimal formula were as follows: Gum base 30 g, ginger oil 2 g, mixing sugar alcohol 60 (xylitol 52.5 g, maltitol 7.5 g).The gum was full of ginger aroma and good taste.关键词
