Abstract
[ Objective ] The purpose of the research was to supply basis for formulating product quality standard for Pu' er tea. [ Method ] The volatile oil was extracted from Pu' er tea by vapor reflux method and analyzed by GC-MS,and then its components were analyzed quantitatively by area normalization method. [ Result] There were 50 kinds of compounds identified from volatile oil in Pu' er tea,its major component was nhexadecanoic acid, its secondary components were ( Z, Z ) -9,12 -octadecadienoic acid, cis-linalcol, phytol, tetradecane, 1,2,3-trimethoxy ben zene, 1,2-dimethoxy benzene ,hexanal, heneicosane and benzaldehyde and the above components accounted for 91.43% in relative content of volatile oil in Pu' er tea. [ Conclusion ] The volatile oil in Pu' er tea mainly contained 7 kinds of compounds, such as alcohols, acids, aldehydes,hydrocarbon, esters, hetero-oxy compounds, aromatic series and heterocyclic compounds.关键词
