Abstract

The determination of fatty acids and fatty aldehyde dimethyl acetals in Haliotis discus hannai Ino was studied using gas chromatography/mass spectrometry (GC/MS).The total lipids of H.discus hannai Ino were extracted using Folch method, derivatised with 10 % H2 SO4-CH3 OH solution, and finally the composition of fatty acids and fatty aldehyde dimethyl acetals was analysed by GC/MS, The results showed that 10% H2SO4-CH3OH solution could prompt methyl esterification effectively, and made the breaking of vinyl ether bond and converting to fatty aldehyde dimethyl acetals.Thirty-two compounds were identified in the current study, including twenty-six fatty acids and six fatty aldehyde dimethyl acetals.The main fatty acids were C16∶0,C20∶4(n-6), C20∶5(n-3), C18∶1(n-7) and C22∶5(n-3); and the main fatty aldehyde dimethyl acetals were C18∶0 DMA, C20∶1 DMA.The composition of fatty acids and fatty aldehyde dimethyl acetals was similar in muscle and entrails of H.discus hannai Ino, but there was significant difference in the content of 4,8,12-trimethyltridecanoic acid (P<0.01).
