Analysis of Intramuscular Fat and Inosine Monophosphate Content in Different Strains Chickens

Abstract
To compare the differences of intramuscular fat and inosine monophosphate between different strains, 9 strains of chickens were adopted.Intramuscular fat was extracted and tested by Soxhlet extraction,inosine monophosphate contents were tested using HPLC.Significance tests suggested that,intramuscular fat content differed significantly between different strains (P<0.05), except for strains S07, D99, and S06 × S07, the contents of intramuscular fat of female was much higher than that of males; IMP contents differed significantly between different strains (P<0.05),and the inosine monophosphate contents of female was much higher than that of males in stains S07,D99,S06 × S01 and S06 × S07.The current study was very important for further work in poultry breeding,especially in meat quality selection.关键词
