The volatile oil of early maturity gold pomelo peel was extracted by water-steaming method. The extraction process was optimized by orthogonal design. The optimum extracting condition obtained: adding 5 folds of water, extracting for 6 hours after smashing 60s. The chemical components were first analyzed by means of GC-MS.
