摘要
Abstract
The antioxidation mechanisms, development trend, and relationships between structure and ant/oxidation property of several main kinds of antioxidants were reviewed. The antioxidation mechanisms included chain termination, peroxide decomposition and metal ion deactivation. The chain terminator included hydrogen donor, free radical scavengers, and electron donor. The work on multi functional, reactive, and natural antioxidants constituted the developing trend.关键词
