摘要

Abstract

The cooking and eating quality of 133 indica rice varieties from South China were evaluated with a rice taste analyzer STA1A and by sensory taste values. The regression equation between sensory taste values and STA1 A-based evalution was es-tablished. showing a significant correlation between the two evaluation methods. The STA1A rice taste analyzer might be a convenient, accurate and efficient tool for evaluation of rice cooking and eating quality.
