Development of a method to detect paraffin added during the processing of vermicelli

Abstract
[Objective]The present study was carried out to determine the paraffin contents added during vermicelli processing to help in food quality supervision in order to maintain food safety standards. [ Method ]The suitable conditions for detection of paraffin were optimized using gas chromatography-mass spectrometry (GC-MS) and an experiment with Cl8H38 and C24H50 was performed to test recovery rate and relative standard deviations. [ Result )The recovery rate of C18H38 and C24H50 were the highest (93.5 and 91.0%, respectively) in vermicelli treated with ultrasonic extraction method. Ultrasound time of 20 min was suitable for extracting alkane components in vermicelli. The relative standard deviations for developed detection method ranged from 3.6-4.8%, and the recovery rate was over 90%, which has achieved the quantitative requirement. [Conclusion]The developed method was found suitable for determination of paraffin content in vermicelli during its processing, qualitatively as well as quantitatively.关键词
