山药中多酚氧化酶活性的测定及其护色研究

摘要
Abstract
[Objective]The aim was to study the activity of polyphenoloxidase and prevention of discoloration of Dioscorea opposite. [ Method] Take the fresh Dioscorea opposite as the material, the activity of Polyphenoloxidase was determined by spectrophotometric method. Meanwhile, the effects on the activity of Polyphenoloxidase for the different inhibitors were tested by experiments. [ Result] The results showed that the se lected color fixatives had the color prevention effect in varying degrees and the best inhibitor was oxalic acid. [ Conclusion ] The optimal com posite color prevention formula of Dioscorea opposita was ascorbic acid 10 mg/ml, sodium bisulfite 8 mg/ml, oxalic acid 6 mg/ml and citric acid 1.00%.关键词
