摘要

Abstract

Peptide powder was prepared from Crocodylus siamensis using the enzymatic catalysis of trypsin before spray drying. After treated by the peptide powder, Kunming mice were normal in health with no illness. The constituents of peptide powder were investigated by analyzing the main components. Metal contents, amino acid compositions and the range of polypeptide molecular mass. The results showed that in the peptide powder from Crocodylus siamensis. Amino acid and metal elements were very rich, and the contents of lysine and leucine needed most in human body were especially high. The polypeptide molecular mass were on the range of 1 000 to 1 300 u. The results indicated that the peptide powder from Crocodylus siamensis was a promising functional health product with high protein,low sugar and low fat.
