摘要

Abstract

[Objective]The paper aimed to study the optimum conditions of alkali protease hydrolyzing Xanthoceras sorbifolia protein. [ Method] Substrate concentration,pH value,temperature,enzyme dosage and hydrolysis time were selected as influence factors,and the degree of hydrolysis as evaluation value for the single factor analysis. Response surface methodology (RSM) was used to optimize the enzymatic hydrolysis conditions of alkali protease based on these factors. And the optimum conditions were subjected to verification test. [ Result]The optimum conditions were as follows: substrate concentration 5% .enzyme dosage 4% ,pH value 9.0. Under these conditions,the degree of hydrolysis was 19.75%. [ Conclusion] The paper could supply technical parameters for future researches and development of X. Sorbifolia protein.
