摘要

Abstract

Tested and analyzed mulberry fresh fruit,the results showed that mulberry was rich in nutrients,it contained anthocyanins,resveratrol,selenium and other active nutrients,besides water,protein,amino acids,vitamins,minerals,sugar,acid and other essential nutritions.Although these nutrition had different mechanisms about the human body,they had an important role on human health and health care.Different mulberry varieties contained different content of nutritions components,and content of amino acids were more complete,which contained 7 kinds of necessary amino acids for human.Free amino acids content were from 0.65% to 1.73%.Functional detection and nutritional evaluation on major components of several mulberry varieties could provide references on comprehensive utilization and depth development of mulberry.
