Application of Liquid Smoking Technology on Aquatic Products
摘要
Abstract
The liquid smoking technology was applied wildly because of its stabilized quality, no benzo （a）pyrene （BaP）and easy to achieve industrializat ion. In this paper, the advantage of liquid smoking,the basis and effect of somke flavourings,the liquid smoking technology and its effect factors, the application of liquid smoking technology on aquatic products were summarized and the developing prospect was proposed, so as to provide references for the promotion of the liquid smoking technology.关键词
