摘要

Abstract

Relationships between microbe and food are mainly beneficial,harmful and transformation between the beneficial and the harmful. Availability in divided into direct useful and indirect useful,and furtherly divided into being benifical to human health and production. For microbe which is harmful to food,some microbial own are disease original bacteria and pathogens that can cause food pollution. Some are not harmtul,but their metabolism products have toxicity which are harmtul to human health. In addition, some microbes can't cause diseases by themselves and produce harmful metabolites,but their growth propagation will bring production some troubles. Some microbes have a little influence on production and health, while others are benifical to production and health in some circmrtstances ,but in other eases,they are detrimental to production and harmful to heath.
