摘要

Abstract

Different cell-wall breaking methods were taken for extracting glutamate decarboxylase ( GAD) from Lactobacillus brevis. The effects of cell wall breaking methods on activity of GAD were studied. The results showed that the ultrasonic method was beneficial to the release of GAD from the cells. The results of orthogonal test showed that the best process for cell-wall breaking with ultrasonic was: ultrasonic power of 220 W, working time of 20 min, the ratio of work time/intermission time of 5 s/10 s.
