摘要

Abstract

[ Objective] The study aimed to discuss the technology of extracting the red pigment from north Shaanxi jujube Muzao. [ Method] With the north Shaanxi jujube Muzao bought in Yanshui Town of Yanchuan County in Yanan City as the tested material, the jujube red pigment was got with the extraction by the water bath leaching. The best extraction solvent for extracting the jujube red pigment was selected and its maximum absorption wavelength was determined through the experiment. The best extraction conditions for 3 factors of leaching time and temperature and material-liquid ratio were obtained through the single factor experiment, on which, the optimum process conditions for extracting the jujube red pigment were selected through the orthogonal experiment. [ Result] The range analysis showed that the effect of the material-liquid ratio on the extraction of the red pigment was greatest, that of the leaching time was next and that of the leaching temperature was least. The orthogonal experiment showed that the optimum process conditions for extracting the jujube red pigment were as follows: 0. 2 mol/L NaOH solution as the extracting agent, the leaching temperature of 80 ℃, the material-liquid ratio of 1 : 20 and the extraction time of 4 h. Under these conditions, the extraction yield of the jujube red pigment was the highest, reaching 79. 5% . [ Conclusion] The study provided the scientific basis for the development and utilization of the jujube.
