Fatty Acids: Metabolism in Poultry and Deposition and Nutritional Regulation in Eggs

Abstract
Fatty acids derived from feeds triglyceride or endogenous fatty acids coupled with cholesterol and other lipids were assembled into very low density lipoprotein (VLDL) particle in the liver with the help of apo-lipoprotein. VLDL was transported from the liver to ovary through blood circulation, and then trans-crossed the outer obstacle of oocyte, and deposited in oocyte via receptor mediated endocytosis. The dietary nutrients and nutritional status of birds were important factors that affect the final deposition of fatty acids in egg yolk probably via affecting fatty acids synthesis or VLDL structure. In this review, the process of fatty acid derivation, transportation and deposition in eggs and their nutritional regulation was summarized.
