水果中主要功能性成分研究进展
A Review for Researches of Main Functional Components in Fruit
摘要
Abstract
Flavanoids, anthocyanins, carotenoids and vitamins contained in fruits have been considered as important functional compounds mainly for their biological actives in antioxidants, free radical scavenger, cancer prevention, anti-inflammation and anti-anaphylaxis. In this article, the content and composition of the compounds were compared among fruit varieties, the application and the efficiency of which in food, medication and chemical industries were reviewed. It suggests that the researches should focus more on monomer components in their functions and processing, and on various by-products of fruit for their comprehensive utilization.关键词
