摘要

Abstract

Most of nitrate and nitrite that the human body absorbed mostly come from daily edible vegetable,especially leaf vegetable,and absorbtion of over dose of nitrate and nitrite are harmful to human health. This article analyzed nitrate and nitrite content in the common leaf vegetables (Small colza and Spinach) under the different storing conditions,viz. 5℃,5℃+package,25℃ and 25℃+package (PE bag). This research provides a reliable basis in how to store the vegetables. The results showed that,the content of nitrite and nitrate in each treatment were increased gradually in the storage process and get maximum value in the 4 d, especially in treatment of 25°C + package,which reached to 3 821mg/kg and 12mg/kg for Small colza, 1966mg/kg and 12. 0mg/kg for Spinach. The content of nitrite and nitrate showed in turn as 5℃ + package<5℃ <25℃ < 25℃+package, and there were significant differences among the four treatment. This results showed that human should eat fresh vegetables as possibly. If storage is necessary,the vagetables can stored in the low temperature (for example refrigerator).
