测定生姜蛋白酶活性的新方法
A New Method for Detecting Ginger Protease Activity
摘要
Abstract
In this paper, a new method for detecting ginger protease activity was proposed by using inactive ginger protease as a reference. Coomassie brilliant blue staining method was employed to detect the activity of ginger protease. The influence of some factors, such as the pH, temperature, metallic ions (Na+, Mg2+, Cu2+, Ca2+) and EDTA on the activity of the protease was discussed. The results indicate that taking the inactive ginger protease as a reference could detect the activity of ginger protease laconically, which exhibited the advantages of simplicity and avoiding the harmfulness of corrosive substance as compared to other detecting method.关键词
