Abstract
A simple method for the determination of cholesterol in pork by external standard-gas chromatography-mass spectrometry has been established.The Single-factor experiment was employed to optimize some sample preparation procedures in the relevant Chinese Standard,determining that ethyl ether was the best extract among three solvants and the optimum saponification temperature and time were 70 °C and 50min respectively.Meanwhile,the methodological study showed that for cholesterol,R2 of linear regression was above 0.999;limit of detection(LOD) was 1.05 μg/g;the recoveries at different levels were all above 75%,and relative standard deviations(RSDs) were below 7%.The method possesses the characteristics of rapidity,simplicity and environmentally friendliness,the linearity,sensitivity,accuracy and precision,it can all met the requirements of daily analysis of cholesterol in pork.关键词
