Abstract
Drying characteristics of Tilapia fillet in a heat pump were studied. A multiple regression model on drying time and energy consumption was established by the single factor test and the quadratic orthogonal test. Ridge analysis shows that at drying temperature of 36'C, drying wind speed of 2.54m/s, and fillet thickness of 0.56cm, the optimum results can be obtained, which are consistent with the experimental data. In addition, the influence of fillet thickness on the drying process of Tilapia ranks first, temperature second, and drying wind speed third.关键词
