食品中微生物危害定量风险评估综述
Review on Quantitative Risk Assessment of Microbiological Hazards in Foods
摘要
Abstract
In recent years, the frequent acts of quality dishonesty resulted in losses to consumers and disrupted the national economic. In China, food safety issues caused by microbiological hazards are of a large proportion in the whole account. Quantitative risk assessment of microbiological hazards can help the government and enterprises to enhance risk management capabilities, prevention and control of microbiological hazards, thereby improving overall food safety level. In this paper, the status of domestic and foreign research on quantitative risk assessment techniques of microbiological hazards in food is reviewed. Existing problems of these assessment techniques and future trends are analyzed.关键词
