摘要

Abstract

[Objective] With potato starch as raw material, the optimum technological conditions for preparing microporous starch were studied by combined-enzyme method. [ Method] With starch oil absorption rate as experimental index, enzymolysis lemperature, enzyme ratio, added quantity, substrate concentration, buffer solution pH and time were selected as influence factors to carry out orthogonal test. [ Result] The optimum technological parameters are temperature 50 ℃ , ratio 4:1,added quantity 2. 0% , substrate concentration 0. 14 g/ml, pH 4, reaction time 9 h, oil absorption rate 83. 2%. [ Conclusion ] The optimum technological parameters fur preparing potato microporous starch by combined-enzyme method were obtained, which will provide reference basis for industrial production.
