摘要

Abstract

[ Objective ] The aim was to study the extraction technology of fish oil by protease, so as to provide references for its study. [ Method] The mixed solution of tuna oil and water was hydrolyzed with trypsin. With the extraction rate offish oil as the investigation target, the response surface methodology was adopted to optimize the extraction technology of tuna oil. [Result] The best extraction conditions were; 1. 71% of trypsin dose, 7.94 of pH, 4. 22 h of extraction time and 44 ? of extraction temperature, under these conditions, the extraction rate offish oil could be up to 90.23% , the degummed, deacidified, decolored and deodorized fish oil met the first-grade standard, its DHA and EPA were 27.71% and 5.94% , respectively. [Conclusion] It is practical to extract the fish oil from the mixed tuna oil and water solution through the hydrolysis of trypsin.
