摘要

Abstract

[Objective] The research aimed to discuss the method of improving the quality of reeling silkworm chrysalis by treating reeling silkworm chrysalis by different ways. [Method] Reeling silkworm chrysalis were treated by four different combined treatment methods of alkali treatment, acid neutralization, adding antioxidants to determine the volatile basic nitrogen and the peroxide value of reeling silkworm chrysalis. And the effects of four methods were evaluated. [Result] 10% sodium carbonate treatment, 5% hydrochloric acid neutralization,adding antioxidant combinations (0.5% propyl gallate and 0.1% sodium erythorbate) could significantly decrease TVBN and POV values of reeling silkworm chrysalis, effectively inhibit the protein catabolism and fat oxidation, so as to improve the quality of reeling silkworm chrysalis.
