Abstract
Authentication of food products has become one of the hot topics in food safety with the development of economy. This paper introduces the principle and application of Isotope Rati Mass Spectrometry (IRMS) and Site-Specific Natural Isotope Fractionation-Nuclear Magnetic Resonance (SNIF-NMR) in the food field, in order to provide reference for propelling the progress of quality identification technology of food.关键词
