HACCP在罗非鱼鱼鳞胶原蛋白多肽生产中的应用
Application of HACCP in the Production of Collagen Bolypeptide of Tilapia Fish Scale
摘要
Abstract
[ Objective ] The research aimed to apply HACCP system in the production process of collagen polypeptide of tilapia fish scale and ensure the safety of the collagen polypeptide in the industrial production by using tilapia fish scale. [ Method] The production process of collagen polypeptide was discussed and the potential hazard in each tache was analyzed. The critical limit, supervision frequency and measures, correction measures, archival records and verification procedure were set up to monitor the critical control points. [ Result ] The key control points were confirmed as acceptance of raw materials, enzyme liquid extraction concentration, spray drying, magnet selection and inner packaging. And the table of HACCP plan was drawn, so as to set up trie quality safety control system in the production of collagen polypeptide using tilapia fish scale. [ Conclusion] The application of HACCP system reduced the potential hazard in the production of collagen polypeplide using tilapia fish scale and guaranted the quality and edible safety of collagen polypeplide.关键词
