摘要
Abstract
[Objective] The research aimed to evaluate the nutritional value of Xueshan chicken. [Method] Using Xueshan chicken as test materials, the content and composition of its amino acida were analyzed- And its nutritional value was evaluated. [Result] The content of ami-no acids in the muscle of Xueshan chicken took 95.34% of protein content and the kinds of amino acids were rich. The content of 8 kinds of human essential amino acids reached 1.096 g/kg. The mass fraction of flavor amino acids, sweetness amino acids and aromatic amino acids in total amino acids were 24. 97% , 17.86% and7.07% respectively. Ail kinds of human essential amino acids were rich and balanced, score of ratio coefficient (SRC) was 76. 91. Among all kinds of human essential amino acids, the first limited amino acid was Met + Cys. [Conclusion] The research could provide scientific basis for future development and utilization of Xueshan chicken.关键词
