摘要

Abstract

Two kinds of the chitosan oligosaccharide derivatives were prepared through Maillard reaction by heating chi-tosan oligosaccharide and a-alanine / asparagine (the ratio of carbonyl group and amino group was 1:1). The pH, absor-bance and fluorescence were determined during the reaction. The chitosan oligosaccharide derivatives were characterized by FITR and their molecular weight was termined by CPC. Their antioxidant activity was investigated by employing various established in vitro systems,such as superoxide,l,l-diphenyl-2-picrylhydrazyl (DPPH) radicals scavenging and reducing power. The results showed the chitosan oligosaccharide derivatives had strong antioxidant activity compared to chitosan oligosaccharide. The antioxidant activity was found to be in the order of CA > CN > COS. The results indicated that the derivatives prepared by chitosan oligosaccharide and a-alanine had better antioxidant activity than that prepared by chitosan oligosaccharide and asparagine.
