摘要

Abstract

With the development of society, the health is important to people. It is call for a high quality of the edible oil. The. components of the fatty acids determine the nutritive value and health effects of the edible oil. The content of fatty acids and essential fatty acids in flaxseed, sunflower seed, walnut was analyzed by Gas Chromatography. The results showed that the content of essential fatty acids are as follows: Flaxseed 65.56%, Sunflower seed 78.50%, Walnut 69.77%. This content is significantly higher than animal oil.
