蜡样芽孢杆菌(Bacillus cereus)筛选鉴定及在雪茄烟叶发酵中的应用研究
Isolation and identification of bacillus cereus and its application in cigar leaf fermentation
摘要
Abstract
One bacterial strain named x-2 was isolated from tobacco leaves and was identified belonging to Bacillus cereus on the basis of 16S rRNA gene sequencing and biochemical properties. X-2 pure culture was applied in artificial fermentation of cigar leaf, and thereafter determination of general nitrogen compound and sensory quality evaluation were carried out. Results showed that after fermentation total nitrogen, protein, total alkaloid, and volatile were decreased by 21.64% , 13.53% , 36.38% and 24.05% , respectively. Smoking tests implied that x-2 pure culture may cause more pleasing aroma while less undesirable tastes and bitterness.关键词
