摘要

Abstract

[Objective]The research aimed to study the ultrasonic extraction and antioxidant activity of polyphenols extracted from grape seeds.[Method]Polyphenols of grape seeds was extracted by ultrasonic extraction and antioxidant activity was determined by scavenging effect on Fenton reaction ?OH radical with spectrophotometry. [Results]The optimum condition for the extraction of polyphenols were as follows; 60 min of ultrasonic time, 75% of alcohol and 1:20 of solid-liquid ratio. An extraction rate for the polyphenols from grape seeds was 10. 71% under the optimum condition. The maxium scavening rate of 0.093 g/L extraction on ?OH was 87. 12 % and IC50 reached 0.031 g/L. [Conclusion]The polyphenols from grape seeds obtained by ultrasonic extraction have good antioxidant activity.
