摘要
Abstract
The corn germ protein hydrolyzed by papain was investigated. The one-single condition of enzyme dosage,temperature, time, and pH was optimized using the degree of hydrolysis (DH) as the index. The optimal effects of the various factors on the DH were studied using a method of quadratic orthogonal rotation combination design and calculation by SAS software. The results showed that the papain dosage was 2.1% (W/W),temperature was 60 ℃ ,time was 3 h and pH was 6.4 at the optimized conditions. Compared with the theoretical data, the real DH was 13.52% after experimental verification.关键词
