Control Technology and Detection Methods for Biogenic Amines in Meat Products
摘要
Abstract
Biogenic amines are derived from amino acids after decarboxylation by decarboxylase and served as nitrogen compounds for biological activity in plants and microorganisms. A small amount of biogenic amines may also participate in normal physiological regulation in human and animal physiology. However, excessive intake can cause food poisoning. In this paper, the technical control, intervention and analysis methods for biogenic amines in meat products are reviewed.关键词
