响应面法优化普洱茶膏的制作工艺
Optimization of Extraction Technology of Pu-erh Tea Paste Using Response Surface Methodology

Abstract
[ Objective] To improve the yield of Pu-erh tea paste. [ Method] On the basis of single factor test, the extraction conditions of Pu-erh tea were optimized with response surface methodology, and the conditions of solid-liquid ratio, extraction time and extraction temperature were optimized with BBD (Box-Behnken Design). [ Result] The solid-liquid ratio had significant impact on the yield of Pu-erh tea, the best extraction conditions were 1:12.2 (g/ml) of solid-liquid ratio, 15.6 min of extraction time, and 92.5 °C of extraction temperature, under which the yield of Pu-erh tea paste could reach up to:22.44% . [ Conclusion] The study provided theoretical basis for the development and utilization of Pu-erh tea paste, and also proved the effectiveness of response surface methodology in optimizing and improving the products processing technology.关键词
