Dietary ω-6/ω-3 Polyunsaturated Fatty Acid Ratio Affects Lipid Peroxide and Ultrastructure in Geese Liver

Abstract
The objective of this study was to investigate the effects of dietary ω-6/ω-3 polyunsaturated fatty acid (PUFA) ratios on lipid peroxide and cellular ultrastructure in geese liver. A total of 160 healthy Yangzhou geese with similar weight (0. 407 ±0. 023) kg, aged 21 days, were randomly divided into 4 groups with 4 replicates per group and 10 geese per replicate. They were fed the diets with ω-6/ω-3 PUFA ratios of 12:1, 9:1, 6:1, and 3:1, respectively. The liver was separated and lipid peroxides were tested at 42, 56, and 70 days of age. The results showed as follows: the contents of malondialdehyde (MDA) and nitric oxide (NO) in liver showed an ascendant tendency with age increasing, and the highest was at 70 days of age. The increasing ranges of 12:1 and 9:1 groups were higher than these of 6:1 and 3:1 groups. It was also observed that the contents of MDA and NO showed a declined tendency with the decreasing of ω-6/ω-3 PUFA ratios, and the lowest was in 3:1 group regardless the detected ages. The cellular ultrastructure observation showed that dietary ω-6/ω-3 PUFA ratios in 12:1 and9:1 groups decreased the number of hepatocyte glycogen pellets, and swelled mitochondria; but there was no significant difference in the average area of mitochondria among all groups (P>0.05). In conclusion, dietary w-6/ω-3 PUFA ratio affects the hepatic antioxidant function in growing Yangzhou geese, and dietary lower ω-6/ω-3 PUFA ratio, such as 3:1 and 6:1, can decrease hepatocytes damage of lipid peroxide.
