摘要

Abstract

Six strains of lactic acid bacteria were initially screened from sample of pickle, and then the content of γ -aminobutyric acid ( GABA) in the GYP fermentation broth with 1% glutamate was measured by paper chromatography and spectrophotometry. After further screened, a high -yielding GABA strain named 3# was obtained. The content of GABA could reach 8. 006 g/L after 3 days fermentation. The strain of 3# was identified as Enterococcus faecalis by morphological, physiological and biochemical characteristics and 16S rDNA analysis.
